Sweet Potatoes and Vitamin A in Ethiopia

While white-fleshed sweet potatoes are a common traditional food in Ethiopia, orange-fleshed sweet potatoes have the potential to address widespread vitamin A deficiency there.  In this photo, UW students on a global health field course learn to plant vines of vitamin A-rich varieties.  The vines were produced through traditional breeding programs in a partnership by the International Potato Center in partnership with a group of Ethiopian organizations.  Learn more details about the project here.  Photo by AnaElise Beckman.
