Current Research Within the Nutritional Sciences Department

    “My lab is interested in how cells respond to deficiencies of metal nutrients such as zinc. Zinc is a required cofactor for thousands of proteins in our cells so their response to zinc deficiency is of great importance to cell function and health. In our most recent work, we are collaborating with Dr. Josh Coon in the Department of Biomolecular Chemistry to measure the absolute levels of all of the zinc-dependent proteins in cells. This analysis is discovering new mechanisms whereby cells decrease the level of certain key proteins to minimize their requirement for zinc and allow the limited supply of zinc to be directed to the most critical functions” (Dr. David Eide).
